Mint Chocolate Chip Waffles

On Sunday’s in our house we have waffles. It’s one of those traditions that just kind of started. Well since St. Patrick’s Day is this week, I thought I’d mix it up a little this week and make Green Mint Chocolate Chip Waffles. Today I’m going to share with you my Mint Chocolate Chip Waffle Recipe.

Here’s what you’ll need:

2 Cups of All Purpose Flour

3/4 Cups of Sugar

3 1/2 Teaspoons of Baking Powder

2 Eggs (Separate the Yolks and Whites)

1 1/2 Cups of Milk

1 Cup of Melted Butter

1 Teaspoon of Peppermint Extract

Andes Baking Chips

Green Food Coloring (Optional)

In a large bowl combine the flour, sugar, and baking powder. Set aside. If you haven’t already ready go ahead and separate the egg yolk and white.

Then in a medium sized bowl lightly beat the egg yolk and add in the milk, melted butter, and peppermint extract. Mix.

IMG_0974Then combine the yolk mixture into the flour mixture. Stir. In a separate bowl whisk the egg whites until they are frothy. Then add the frothy mixture into the batter.

Add a few drops of food coloring and stir. Then you are going to add in as much or as little Andes Baking Chips as you’d like. Stir.

Cook waffles in a heated waffle iron according to your waffle iron instructions. When they are finished add some whipped cream, a few Andes Baking Chips, and maybe even a little chocolate. Then ENJOY!!
